It’s hard to believe that something this satisfying can be this good for you. Make really big batches, it gets better & better, and most people want a second or third serving. The good news: it lasts for a good few days in the fridge (if you can hide it from the natives 🙂
3-10 fresh tomatoes
2 lg cans of crushed tomatoes (with basil or other spices)
2 cucumbers and/or zucchini
1 vidalla or purple onion
1-2 red peppers
3-6 garlic cloves
juice of one lemon
2-4 T olive oil (optional)
1/3 c vinegar
2 T honey (optional)
tabasco sauce, as much as you dare
What you do:
Puree everything in a food processor, until it’s as smooth or chunky as you like. Refrigerate.
Serve with a dab of sour cream (don’t go low fat, ever) and finely sliced scallion or chives.
