Add a little kick to your BBQ! Awesome with meat and fish.
WHAT YOU NEED:
- 2 ears of corn
- 2 mangoes
- 2 avocados
- 1 c cherry tomatoes
- 1/2 c Cilantro
- 5 Scallion
- 1 Lime
- 1/2 t Chili pepper
WHAT YOU DO:
- Shuck & grill the corn
- Pit & cut one mango in half and grill
- Grill all or 1/2 the tomatoes
- When charred, remove fruit and vegetables from the grill & cool
- Chop everything into bite size pieces
- Squeeze lime juice on top. Sprinkle with chili pepper.
