Granita is a magical dessert. It’s pretty much guilt free, it’s refreshing, comes in any flavor you can think of & works well with or without booze. And it’s a perfect foil for a rich chocolate dessert. Don’t get me wrong, I am a lover of baked sweets of any sort from the finest fare to good old bread pudding –(with vanilla sauce and a generous helping of whipped cream), but a boozy fruit granita tops off your meal with class -and a bit of a buzz. This Granita is a great balance of savory & sweet and the elegant note of rosemary makes it that much classier. For the same time it would take you to pick up some popsicles, you can really impress your guests. Unless your guests are 4 year olds and really like red, white and blue stripes in their dessert. In which case, you should probably skip the booze 🙂
Red Wine Pomegranate and Rosemary Granita
What you need:
- Red Wine
- Pomegranate Juice
- Sugar
- 2 sprigs of fresh rosemary
What you do:
- Puree the fruit
- Combine the fruit with the wine (or water if you’re a party pooper) and sugar.
- Put it in the freezer and scrape it with a fork every hour or so until it’s frozen.
